Chia Seed Jelly

This super easy, healthy jelly has been a staple in my household. Especially a favorite of my 2 year old! You can use whatever berries you have on hand.

Ingredients:

3 cups frozen berries (I typically use blueberries and strawberries)

2 tbsp chia seeds

2 tbsp maple syrup (or honey)

Directions:

Put frozen berries into sauce pan and turn to medium/high heat. Allow berries to start cooking down. Mash the berries as they are cooking, until you have the berries mashed to your desired consistency. Turn off heat.

Add maple syrup or honey. Two tbsp will yield a tart product. Add more maple syrup/honey if desiring a sweeter jelly.

Add chia seeds. Stir until well-incorporated.

Pour into glass container and put in fridge to cool and thicken.

Keep in fridge for up to 1 week. Freeze extras in ice cube tray to have individual portions ready to use.
